Vegetable casserole with mushrooms

For 4 guests.
If you are carnivorous you can add some bacon cubes to the onion and mushrooms.
500 gms of fine green beans topped and tailed
2 or 3 white turnips cut lengthways
2 carrots peeled and cut in sticks (it looks better)
1 large onion cut in coarse chunks
A handful of mushrooms cut in halves. At the moment the wild mushrooms are in season. Expensive but then you just need a few.
A few cubes of bacon (optional)
In a boiling pot of salted water throw the carrots first. When they begin to get soft add the turnips and the beans. This is not the time to have a glass of wine. You want the veg just crunchy. Drain.
In a frying pan heat some butter or olive oil. Add the mushrooms and onion, and if you wish the bits of bacon. Stir well. It will take only a few minutes.
Mix everything in a bit pot, warm up whilst stirring carefully on low heat. You do not want to end up with a mash.
Serve with roasted potatoes, rice or pasta. And have that glass of wine.
